Method

Make sure that you have run singleplayer at least once, and set your graphics options in each (except for your resolution).

Go to gameDir\base, and edit sof2sp.cfg, preferably using textpad.

Find these lines (they probably won't be together):
seta r_customwidth "xxxx"
seta r_customheight "xxx"

Change them to set your resolution.

Now find this line:
seta r_mode "x"

Change it to -1.

You may find a cg_fov line in the file. Don't bother changing it; it will get reset back to 80 whenever a cut-scene plays. You could enable cheats, bring down the console, and type "cg_fov xx" constantly throughout the game, or you can use a more permanent hex-editting solution like I do.
Use a hex editing tool such as XVI32 and edit cgamex86.dll, located in your gameDir. The default FOV is stored in AEA54-AEA55. You'll see that it is set to 38-30, which is 80. Change it according to your preference, though it cannot exceed 99. I recommend 39-30 (90) for 16:10 displays and 39-35 (95) for 16:9 displays.

Known Issues

The method for enabling widescreen in singleplayer is potentially complicated.
In widescreen, certain HUD elements get cut off from the bottom. In 16:9 resolutions, your health meter gets completely cut off!
The inventory and mission objectives screen have some screen elements that stretch and some that don't, making it look a little awkward.
